I love homemade bread but I don’t enjoy making it. It’s too complicated for someone like me who prefers to cook and isn’t a great baker. Besides, who has patience for bread dough to rise? Yeast can be tricky. Additionally I try to limit my gluten intake for inflammation reasons so most breads are off the table. Also, let’s be honest, most gluten-free bread can be gross. So…I took care of all these problems and created the most amazing oat bread recipe.
Quick and Easy Oat Bread Recipe
The best part? This gluten free bread recipe takes less than 10 minutes to prepare, and including the bake time, you can be enjoying a slice in less than an hour! It’s yeast free, so you don’t have to wait for anything to rise. Simply mix the dry ingredients in one bowl and the wet ingredients in another. Join them together, bake and voila! You’ve got delicious bread.
This recipe for gluten free bread is also very flexible which is generally unheard of in baking. This oat bread simply tastes delicious and has a deeply satisfying hearty and oaty (is that even a word?) flavor that works brilliantly with both sweet and savory accompaniments. It’s also darn delicious on it’s own since this bread’s texture is super soft, tender and moist.

Tips for this yeast free oat bread recipe:
- Using different gluten free flours, yogurts or milks may change the consistency and how the liquid is absorbed. The batter should be sticky but hold together. If additional moisture is needed, stir in extra milk until the right consistency is reached.
- To make this recipe dairy-free, you may use almond milk and coconut yogurt or your favorite dairy-free alternatives.
- Avocado oil or coconut oil may be used in place of applesauce.
- Maple syrup may be used in place of honey.
Homemade Oat Bread (Gluten Free, Yeast Free)
Yields: 1 loaf
Prep: 10 minutes| Cook Time: 45 minutes | Total Time: 55 minutes
Ingredients:
- 2 cups gluten-free all-purpose flour
- ¾ teaspoons xanthan gum (omit if flour blend contains it)
- 2 ½ teaspoons baking powder
- 1 teaspoon sea salt
- 1 large egg
- 1 cup whole milk
- 1 cup whole milk plain Greek yogurt
- ¼ cup unsweetened applesauce
- ¼ cup honey
- 1 cup gluten-free old-fashioned rolled oats (plus extra for topping)
Oat Bread Directions:
- Preheat oven to 375 degrees F. Line a 9×5” loaf pan with parchment paper and set aside.
- In a large mixing bowl, add flour, xanthan gum, baking powder and salt. Whisk to combine.
- In a medium bowl, beat the egg. Add milk, Greek yogurt, applesauce, honey and oats. Stir to combine.
- Pour wet ingredients into the bowl of dry ingredients. Stir until fully incorporated.
- Transfer dough to the prepared loaf pan and shape into a loaf. Sprinkle on additional oats and place in preheated oven to bake for 30-45 minutes or until a toothpick inserted into the center comes out clean.
- For additional browning on the outside of the loaf, set the oven to broil and bake the bread for an additional 5 minutes or until browned to your liking.
- Remove bread from loaf plan and place on a cooling rack to cool completely before slicing and serving.
